This easy recipe (if you can even call it a recipe) is heavily inspired by the delicious Spinach Salad from the Minneapolis-area pizza chain Pizza Luce. Their salad has spinach, onions, candied pecans, dried cranberries, balsamic vinaigrette, and blue cheese. My recipe has kale, walnuts, and NO cheese. I'm too lazy to make my own dressing so I buy Annie's Goddess Dressing.
Last week, we bought a big bag of pre-washed kale. Every night at dinner, I would make a big bowl of salad for the two of us to split. A few tablespoons of dressing (I added a splash of red wine vinegar, too, but it doesn't need it) and mix thoroughly. I like to stir the bowl and coat every leaf of kale with dressing instead of pouring too much on top.
The nutritional yeast sprinkled on the wet leaves adds a little bit of cheesy flavor. I cut all the onions in advance so I only had to cry once ;)
I bought a baking bag of chopped walnuts. They're so expensive and you don't want to overeat nuts anyway, so I portioned out 1/8 cup of nuts per plate with a little measuring cup. That way I don't overload each salad with nuts and the bag lasts throughout the week.
