This is an easy meal that almost guarantees at least one more night of leftovers. For the taco meat (aka tempeh), check out my Homemade Taco Seasoning spice mix recipe!
Cut some romaine lettuce:
Dice a few tomatoes, an onion, scallions, cilantro & toss together:
Mix the fresh veggies with the lettuce if you wish:
Chop some cilantro:
Add cilantro to your rice:
Cook up some taco seasoned tempeh meat:
Rinse a couple cans of beans:
Add the rice, beans, and frozen corn to the tempeh and heat through:
Load up your plate with the salad mixture, the hot meaty mixture, and top it off with salsa:
