Instagram: Vegan Bean Burritos



Supper the past 2 nights was this dish I prepped on Sunday, Vegan Bean Burritos: combine canned black beans, refried beans, corn, cooked brown rice, and cilantro, and heat with any extra taco spices you like. Spoon into tortillas and roll ‘em up Chipotle-style. Place in a pan and bake 20 minutes-ish at 425-ish. Enjoy with salsa. Refrigerate leftovers and reheat tomorrow! Easy, and I love how they felt like I was eating those yummy frozen Amy’s brand burritos.
